At Sauce Brewing Co in Marrickville, a red-hot iron poker will be plunged into a freshly poured stout. The sugar in the dark beer will caramelise instantly, releasing a toasted marshmallow aroma and forming a velvet head that no tap pour could produce. The centuries-old German ritual of Bierstacheln (beer poking) arrives in the Inner West this month as part of the inaugural Dark Side of the Beer festival.
Running from Thursday 23 July to Sunday 26 July, the free festival unites all 15 breweries on the Inner West Ale Trail for a celebration built around stouts, porters, dark lagers and doppelbocks. Family-friendly and mostly unticketed, the four-day programme mixes exclusive brews, live music, line dancing and a Sunday Fireside Choir singalong at Young Henrys.
The Inner West Ale Trail’s official announcement declares: “Sydney’s biggest winter beer festival is here. Get ready to give into your Dark Side with our ultimate winter beer celebration from Thursday 23 July to Sunday 26 July.”
Beer poking is the festival’s headline act. Beyond Sauce, the ritual will be performed at Bracket Brewing, Mixtape Brewing & Bar and Kicks Brewing, all in Marrickville. A barkeep heats a metal poker until it glows orange, then lowers it into the beer. The thermal shock caramelises residual sugars and creates a thick, marshmallow-like head that transforms the drinking experience. Each of those venues will also pour exclusive dark brews and one-off collaborations alongside their regular ranges.
Entertainment stretches across four days. On Thursday the festival launches at Grifter Brewing Co, while Shanty Club performers roam between venues, Chuck & Son’s Brewing Co in St Peters kicks off country line dancing, and Hopsters Co-operative Brewery in Enmore hosts an Asphalt Words poetry night. Friday brings live jazz with The Meltdown at Heaps Normal in Marrickville (ticketed), a dark beer tap takeover and bottle share at Hopsters, and DJs at Young Henrys. Saturday’s highlights include another roaming Shanty Club session, a birthday party at Chuck & Son’s, and the Bar Copo x Heaps Normal Winter Party (also ticketed). Sunday culminates with the Fireside Choir, led by musician Elana Stone of Earth Wind and Choir, at Young Henrys, followed by Christmas in July with Adult Glee Club at Chuck & Son’s and acoustic sets at Hopsters. Firepits, food specials and line dancing classes will be scattered throughout.
Across the trail, venues stretch from Newtown to Rozelle and Camperdown, with a dense cluster of breweries around Marrickville’s industrial backstreets. Young Henrys, Philter Brewing, Sauce, Batch Brewing Co, The Grifter, Mixtape, Hawke’s Brewing, and Heaps Normal all call Marrickville home, while Hopsters sits a short walk away in Enmore and Chuck & Son’s Brewing Co is in St Peters. Sydney Brewery Rozelle and Pickled Monkey Brewing Co round out the map.
Public transport is the smartest way to move between venues. Trains serve Newtown, Marrickville and St Peters stations, and several brewery hubs are walkable within 10 to 15 minutes of each other.
